Rufus comes from Latin “red-headed”, a fitting name for this red-white coferment, traditionally called “ryšák” aka ginger in Czech!
Varieties: Fieldblend of old vineyards – a mix of many red and white grapes including Riesling, Blaufrankisch, Pinot Blanc and a lot of unknown
Vineyard: Loess, clay. Farmed organically by Jaroslav himself.
Vinification method: The grapes are hand-picked and destemmed. Foot stomped together and fermented in old oak barrels for two weeks. Aged in old oak barrels (225 / 400 L), until the next harvest. Zero sulfur added, unfined and unfiltered.
Personality: an unclassifiable idiosyncratic and delicious wine full of fresh berries and spicy notes.
