The Montlouis fruit comes from argilo-calcaire soil, which winemaker Lisanne Van Son says contributes roundness, and the Anjou fruit is grown on schist-limestone, contributing minerality. Direct press, fermented separately in fiberglass tanks. Aged one year before bottling; unfined, unfiltered.
