ABOUT THE PRODUCT Made from a traditional process known as sun-dried (soleo) Pedro XimEnez whereby the fruit turns to raisins. Then aged in casks for many years using the traditional Solera system within the ancient cathedral style cellars of Barbadillo. Estate bottled by Bodegas Barbadillo, producers of the finest sherries since 1821. SPECIFICATION Variety: 100% Pedro XimEnez. Appearance: Clear deep mahogany. Nose: Clean deep aromas reminiscent of plums, raisins, and chocolate. Palate: Velvety, sweet and long finish. Food Pairing Suggestion: Blue cheese, ice cream, and dark chocolate. Serving Temperature: 6º to 8º (43º to 46º). Best to consume within three years of bottling and two months after opening.
