Both a wine and a mission statement, “No Autoclave” is anchored by Lambrusco Salamino di Santa Croce, and blended with Lambrusco di Sorbara and the autochtonous white grape Pignoletto in varying ratios depending on the year, and all three grapes are co-fermented.
