Winemaker’s note: “Naše (= ours in Czech) is truly Ours in the sense that it reflects us and reminds us of who we are. It is a tribute to us, our place and our people. It is a legacy of our cooperation – my immediate and extended family as well as many colleagues. It is a thank you to our Bílovice, to the land. Because Nestarec is all these things. But no more sentimentality, because this wine is the exact opposite of that. It’s a celebration of everyday life and freedom.”

The label is a reference to the signpost that marks the beginning and end of Milan’s village and stands literally 3 steps from the entrance to the winery.

Grapes: field blend of Riesling, Welschriesling, Neuburger, Veltliner, Pinot Blanc.

Vineyard: “Firma”, a plot planted right next to his winery in Velke Bilovice by Milan and his team in 2018. Loess and clay, estate-owned and certified organic.

Cellar: The grapes are hand-picked, passed through a sorting table, foot-stomped and then macerated for several days with stems. Once the fermentation started, the wine was pressed on Nestarec’s prototype “treadle press” and the must put into stainless steel to finish. As the wine was taking its time to ferment, Milan decided to bottle it while the fermentation was still going, in early June, under crown caps with some lees, to get a lightly sparkling cloudy wine. Undisgorged, no SO2 added.

Personality: “A little funky wildness on the nose. Lots of lively nervous acidity, yet tannic grip at the same time. This wine calls for a shake to stir lees before serving, as the back label suggests.”
