The wine undergo a late malolactic fermentation starting the following spring. In this way the wines reap the maximum benefit from their contact with the gently stirred less. Carbon Dioxide, the natural product of this late fermentation, will protect the wine throughout their elevage, during which tine the wines are never mechanically pumped or racked.
