La Spinetta Gallina vineyard Barbaresco comes from a 5 hectare vineyard on the south-western side of Nieve with a southern exposure. The vines are 35-45 years old and grow on calcerous soil at 270 meters above sea level. Harvest usually happens in the first or second week in October, after which time, the grapes are fermented in rotofermenters for 7 to 8 days. The wine then ages for 20-22 months in half neutral, half new, medium toasted French oak barrique. Malolactic fermentation takes place in the barrique. Gallina Barbaresco is then aged for another year in bottle before its release. The wine is not filtered of clarified.
