Varieties: the 2021 blend is 50% Viognier, 40% Sauvignon Blanc, 10% Pinot Noir clairet
Winemaking: the grapes are hand-harvested and vinified separately. Viognier and Sauvignon blanc are barrel fermented and aged in barrels for 6 months, and then in steel for 3 months, total of 9 months. The Pinot noir part is direct pressed (blanc de noirs) and added to the blend. No filtration, fining and no additives.
Personality: Honeysuckle, brioche, a touch of mead, round and nicely concentrated, with fresh finish: you’ll love staring at your reflection on the surface of this wine.
