100% Merlot. 100% de-stemmed but lots of whole grapes, uncrushed. 4 to 6 months aging in stainless steel, 1 to 2g of SO2 added only at bottling. Violets and pure, lush, dark plum fruit, backed up by cracked pepper and even a hint of olive. On the palate, the wine is full-bodied but not clunky, with bright acidity keeping things fresh. Tannins are soft, just framing the texture a bit. Drink now, but will do nicely over the next few years too.
