Vinification Method: The grapes are hand-harvested into small crates and then macerate on the skins for 5 days. After 6 months in stainless steel and cement tanks, the wine is transferred to bottles with addition of unfermented juice from the same vintage to finish fermenting in bottles. No fining, no filtering, no sulfur added at any point (total sulfites <10ppm). Disgorged, zero dosage added. Personality: herbal and lush with delicate bubbles.
