Vineyard: Clay and limestone with pebbles, vines planted in 1990. Estate-owned and farmed organically by Florence and her team

Making of: Grapes are hand-harvested and destemmed. The wine is fermented traditionally for about 8 days at low temperature. The wine is bottled lightly filtered with a small addition of sulfur.
