Making of: Grapes are hand harvested and destemmed. They put the juice and the skins in fiberglass tanks and let the juice ferment spontaneously. The skins are removed after a short amount of time to limit the amount of extraction in the wine and keep the freshness. The wine is racked once after alcoholic and malolactic fermentation complete, and goes back into tank for 6-8 months of elevage. The wine is bottled unfined and unfiltered.
